4. Non-Dairy Choices
Non-dairy products are a popular category that are attracting more and more consumers. In fact, in
a study conducted in Greece by Nielsen, more than 8 out of 10 consumers (83%) are thinking of
buying or are already buying non-dairy products, while 2 out of 10 (18%) say they are willing to pay
more to acquire them.
The adoption of non-diary milk alternatives is in line with the health trend that has been in full swing
for many years. Most cafes already offer alternative items, such as oat, almond and soy milk
beverages, and it seems that this trend will continue to grow in popularity. Milk alternatives for coffee
are becoming increasingly innovative with companies producing non-dairy products that mix more
easily with coffee.
5. The sense of handmade
Coffee that is prepared in front of the customer gives the feeling of hand-made coffee that is
prepared exclusively for each individual consumer. The presence of micro roasters and on-site
roasting, which emerged in the last two years, is coming back and making the preparation of coffee
a more personal affair for every consumer and barista.
6. Easy home preparations
Most coffee consumers have a coffee machine at home, or at least they used to. Two very strong
trends are now apparent. On the one hand the preparation of individual cups through brewing
methods for ltered coffee, and on the other the increasing popularity of more and more machines
that use capsules. In both cases, making coffee is easier and faster than ever, allowing home baristas
and coffee lovers to customize their own cup of coffee with the help of products they look for in the
retail sections of more and more cafes.
